I don’t like autumn (means winter is coming) but I do love the excuse to make soup! Here are three soups I’ve discovered over the last few weeks that we’ve all really enjoyed:
1. Spiced Carrot and Lentil Incredibly simple soup with great flavour. Notes: used 2 tsp ground cumin instead and it worked fine. 600g carrots is around about 6-7 largish carrots.
2. Sundried Tomato Intense. Note: added some milk to make it thinner and so it was also very creamy tasting.
3. Lentil and Coconut So creamy and very moreish. Note: used brown (continental) lentils. Freezes well.
